1/4 C. Salsa
1/4 cup chopped red onion
2 Italian sausages (casing removed)
1 Pillsbury frozen pie crust
Preheat oven to 350 degrees. Spray cupcake pan with PAM.
In a frying pan…fry crumbled sausage with chopped onions til sausage is cooked. Roll out the pie dough and using a 3″ round cookie cutter (or I use a glass) cut out 12 circles of dough. Place each circle in the bottom of cupcake pan. Whip eggs and salsa with a whisk until frothy and set aside. Put about a teaspoon of sausage/onion mixture in each dough cup. Then put 3 to 4 Tablespoons of egg mixture over the sausage. Top each one with cheddar cheese. Bake for 30 minutes or until set and slightly browned.
(Use a butter knife to go around each quiche to loosen it from the pan)
