More Superbowl grub…

04 Feb

Who doesn’t love a good SLOPPY JOE?  Comforting and fun…and with a healthier twist because I’m using turkey…I will keep this mixture warm in my crockpot, and set out some amazing buns…maybe the square ones from COSTCO…(to die for!)  and people can just grab one and go!

Joe’s Sloppy Joes
2 pounds Ground Beef  (I’M USING GROUND TURKEY!)
1 cup ketchup
1 red bell pepper diced small
1 green pepper diced small
½ Spanish onion diced
¼ cup yellow mustard
¾ cup light brown sugar
2 tablespoons Worcestershire sauce
¼ cup oil
Salt and pepper to taste

Place oil in sauté pan and heat over medium heat.
Add onions and peppers. Cook until soft. Add ground beef and cook until meat is completely brown.

Add ketchup, mustard, Worcestershire sauce, and brown sugar.

Cook for 15 minutes
Season with salt and pepper.

Regardless of the recipe for the sloppy joe filling…have you ever tried slicing a giant King’s Hawaiian round loaf horizontally in half, putting the sloppy joe filling on bottom, topping with coleslaw (a Pittburgh thing) replacing the top of the loaf and slicing in wedges to serve? Yum. My family was initially grossed out, but won’t eat sloppy joes any other way now. I have to credit the recipe to Jerome Bettis, published a few years back before a Superbowl….
